Braised Catfish with Leeks and Mustard

Serves 4

Ingredients:

2 tablespoons butter
1/2 cup thinly sliced leek
2 shallots, finely chopped
4 (6 ounce) catfish fillets
1/2 cup white wine
1/2 cup chicken broth
Salt and pepper
1/2 cup heavy whipping cream
1 tablespoon Dijon mustard
1/2 teaspoon fresh lemon juice

Baked Crab Cakes

Serves 8

Ingredients:

3 large eggs, separated
1 1/2 cups crab meat, flaked
1 cup crushed saltine crackers
1/4 cup butter, melted
2 teaspoons lemon juice
1 teaspoon minced green bell pepper
1 teaspoon minced celery

Preheat oven to 375 degrees F. Grease 8 (8 ounce) ramekins; set aside.

Pan Roasted Striped Bass

Serves 4

Ingredients:

4 (6 ounce) center-cut-striped-bass fillets, skin on
Salt and pepper
2 tablespoons peanut oil
3 tablespoons unsalted butter
2 sprigs fresh thyme
Coarse sea salt

Dry the fillets thoroughly with paper towels (this will help keep the skin crisp), season them with salt and pepper on both sides. Heat the oil in a large sauté pan over medium heat.

Blackened Cajun Catfish

Makes 4 servings

4 (6-ounce) catfish fillets
1/3 cup butter, melted
2 tablespoons fresh lemon juice
1 tablespoon dried thyme
1 teaspoon salt
1 teaspoon cracked black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
1/3 cup dry white wine

Heat a large cast-iron skillet over medium-high heat for 10 minutes, or until hot.

While pan heats, rinse fillets and pat dry. Mix melted butter and lemon juice in a small bowl. In another small bowl, combine thyme, salt, pepper, paprika, garlic powder and red pepper flakes; mix well.

Shrimp Enchiladas with Goat Cheese and Chipotle Cream

Serves 2

Ingredients:
1 tablespoon butter
1 cup diced leek, white and light green parts
1/2 cup heavy cream
4 ounces mild goat cheese
Salt and freshly ground black pepper, to taste
1 teaspoon olive oil
12 shrimp (26 to 30 per pound), peeled and deveined
Chipotle Cream:
2 chipotle chilies in adobo sauce, finely chopped and strained
1 cup heavy cream
4 flour tortillas, 8 inches in diameter

Preheat oven to 350 degrees F.

Sesame Ginger Roasted Halibut

Serves 4

Ingredients:

1 cup teriyaki sauce
1/2 cup ginger dressing
4 pieces of halibut
1 cup pineapple, thinly sliced
1 green onion, finely diced

Preheat oven to 350 degrees F.

Place fish and diced pineapple on a baking sheet and baste liberally with sauce. Place in oven for 15 minutes or until fish flakes easily. Top each piece of fish with sliced green onions and serve immediately.

Maine Lobster Pot Pie

Serves 6 to 8

1 large potato, peeled, cubed and boiled
3 tablespoons butter
1 cup onion, chopped
1 sweet bell pepper (red, yellow or orange), cut into 3/4-inch pieces
1 (6-ounce) package mushrooms, stems trimmed and sliced
2 cups Maine Lobster stock
1/2 cup heavy cream
3 tablespoons corn starch
3 tablespoons water
12-ounces cooked Maine lobster, cut into bite-sized pieces
Sea salt and freshly ground pepper
2 refrigerated pie crusts

Preheat oven to 350 degrees F.

Crunchy Walnut-Crusted Salmon Filets

Serves 4

1 cup chopped walnuts
2 tablespoons dry breadcrumbs
2 tablespoons grated lemon rind
1 tablespoon olive oil
1 tablespoon chopped fresh dill
Salt and pepper
4 salmon fillets, skin-on
2 teaspoon Dijon mustard
Lemon juice

Preheat oven to 350 degrees F.

In food processor, process walnuts, breadcrumbs, lemon rind, oil, dill and salt and pepper to taste, using pulsing action until crumbly, mixture should slightly stick together; set aside.

Crab Quiche

Serves 4 to 6

Ingredients:

2 large eggs, slightly beaten
1/2 cup sour cream
1/2 cup milk
2 tablespoons butter, melted
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 teaspoon Creole seasoning
1 cup crab meat
1 cup shredded Swiss cheese
1/2 cup chopped green onions
1 (9-inch) pie shell, unbaked

Preheat oven to 350 degrees F.

Beer Battered Shrimp

Serves 4

Ingredients:

Vegetable oil
1/3 cup all-purpose flour
1/4 cup beer
1 large egg white
1/4 teaspoon salt
3/4 cup dry bread crumbs
1/4 cup finely chopped pecans
1/4 teaspoon pepper
1/4 teaspoon salt
1 pound large shrimp, cleaned peeled and deveined

Preheat oil in a deep fryer to 350 degrees F.
