Tuna Burgers

Makes 4 burgers

Ingredients:

1 pound tuna fillets
1 medium green bell pepper, chopped
1 medium onion, chopped
2 cups soft bread crumbs
3/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
4 buns

Pulse tuna in food processor until it resembles ground beef. Combine with green pepper, onion, bread crumbs, salt and pepper; mix well. Shape into 4 patties. Heat oil in a large nonstick sauté pan and brown on both sides, about 5 minutes each side.

Remoulade Sauce

Makes 1 cup

Ingredients:

1 cup Mayonnaise
3 tablespoons chopped capers
1 tablespoon chopped dill pickle
1/2 teaspoon dried tarragon
1/2 teaspoon chervil
2 teaspoons dijon mustard
Salt and pepper

Place all ingredients in a bowl and stir to combine. Season to taste with salt and pepper. Chill before serving.

Chipotle Sauce for Shrimp or Scallops

1 (8 ounce) can of Chipotle peppers in adobo sauce
2 cups mayonnaise
3 tablespoons prepared yellow mustard
1/4 cup chopped cilantro

In a food processer, chop the chipotles and add the mayonnaise and mustard. Blend until smooth. Add the chopped cilantro leaves and mix well. Let sit 2 hours or overnight before serving.

Cajun Cocktail Sauce

Makes 2 1/2 cups

Ingredients:

1 1/2 cup ketchup
1/2 cup chili sauce
2 cloves garlic minced
1 tablespoon minced onion
2 tablespoons prepared horseradish
2 teaspoons lemon juice
2 1/2 teaspoons Worcestershire sauce
1/4 teaspoon Tabasco sauce
1/4 teaspoon fresh ground black pepper
Salt to taste

Mix all ingredients well. Cover & refrigerate. Serve chilled

Basic Cocktail Sauce

Makes 2 servings

Ingredients:

6 tablespoons tomato ketchup
2 tablespoons horseradish
4 tablespoons lemon juice
Celery salt to taste
Tabasco sauce

Shake all ingredients until well mixed. Add celery salt and Tabasco sauce to your taste. Chill and serve.

Lemon Butter Sauce

Makes 1 cup

Ingredients:

1 cup unsalted butter
1 teaspoon chopped garlic
1 tablespoon minced fresh parsley
1/4 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon lemon juice
2 tablespoons white wine

In a medium-sized sauce pan over medium heat, add 1/4 cup of the butter and the remaining ingredients to the pan, sauté for 4-5 minutes. Add the remaining butter and stir until melted. Keep warm until ready to use.

Seafood Alfredo

Makes 6 cups

Ingredients:

1/4 pound unsalted butter
1 tablespoon minced garlic
1/4 cup white wine
2 cups heavy cream
Juice of 2 lemons
1 teaspoon hot sauce
1/2 pound lump crab meat
1/2 pound shrimp, peeled and deveined
2 tablespoons fresh basil, chopped
1 cup asiago or parmesan cheese
Salt & white pepper

Blackened Redfish

Serves 4

1 egg
1/4 cup vegetable oil
1 tablespoon lemon juice
1 teaspoon hot sauce
1 pinch salt
1 pinch white pepper
4 (4-6 ounce) redfish filets
1/2 cup olive oil
2 cups flour

In a medium bowl, mix together the first 6 ingredients. Cover the filets in the mixture and let sit 5 minutes. In a medium sauce pan, heat the olive oil over medium high heat. Dredge the fish in the flour and shake off the excess. Cook until golden brown on both sides. Serve over angel hair pasta.

Oysters Diablo

Makes 2 dozen

Ingredients:

1 tablespoon extra-virgin olive oil
2 tablespoons minced red onions
1 tablespoon minced garlic
3/4 cup chopped mushrooms
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cayenne pepper
1 tablespoon minced fresh dill
1/4 pound shrimp, peeled, deveined and chopped
1/4 pound fresh crab, chopped
1/2 cup port wine
4 tablespoons unsalted butter
1 tablespoon flour
4 tablespoons Italian bread crumbs
6 tablespoons parmesan cheese, plus more for garnish
1/2 cup heavy cream
2 dozen oysters, shucked

Salmon and Brie Grilled Cheese

Serves 4

Ingredients:

8 slices rye bread, crust removed
16 thin slices Brie
24 thin slices smoked salmon
2 tablespoons butter
8 eggs
1/4 cup sliced red onion
Parsley, for garnish
