Shrimp Toast

Makes 24 appetizers

1/2 pound raw shrimp, peeled and deveined
2 tablespoons chopped green onion
2 tablespoons finely chopped water chestnuts
2 tablespoons soy sauce
1 teaspoon dark sesame oil
1 egg white, lightly beaten
6 slices white sandwich bread, crusts removed

Combine shrimp, onion, water chestnuts, soy sauce and sesame oil in the bowl of a food processor and pulse until shrimp are finely chopped. Remove, stir in egg white; mix well.

Cut the bread diagonally into quarters. Spread shrimp mixture evenly over to edges. Pour the oil about 2 inches deep in a large sauté pan and heat to 350 degrees F. Place toasts, shrimp side down, in the oil and fry until golden brown, about 2 to 3 minutes. Flip and brown on other side, about 1 minute more. Drain on paper towels and serve warm.
