Beer Battered Shrimp

Serves 4

Ingredients:

Vegetable oil
1/3 cup all-purpose flour
1/4 cup beer
1 large egg white
1/4 teaspoon salt
3/4 cup dry bread crumbs
1/4 cup finely chopped pecans
1/4 teaspoon pepper
1/4 teaspoon salt
1 pound large shrimp, cleaned peeled and deveined

Preheat oil in a deep fryer to 350 degrees F.

In a medium bowl, combine flour, beer, egg white and salt; beat until smooth. In another bowl, stir together dry bread crumbs, pecans, pepper, and salt. Dip shrimp into the beer batter, then dredge a through the bread crumb mixture. Fry for 3 to 5 minutes, until golden brown. Drain on paper towels and serve warm.
