Thai-Style Swordfish Steaks

Serves 4

Ingredients:

2 tablespoons soy sauce
2 teaspoons firmly packed brown sugar
1 teaspoon ground cumin
1 teaspoon sesame oil or vegetable oil
1/4 teaspoon crushed red pepper flakes
4 (6-ounce) swordfish steaks
4 green onions, diagonally sliced
Salt and pepper
3 cups fried or steamed rice

Preheat oven to 400 degrees F.

Combine soy sauce, brown sugar, cumin, sesame oil and red pepper flakes in an oven safe baking dish. Add swordfish and turn to coat both sides. Marinate for 5 to 15 minutes.

Top with the onions and bake in the oven for 15 minutes, until fish is cooked through. Season to taste with salt and pepper and serve over rice.
