Stewed Shrimp and Tomatoes

Serves 2

Ingredients:

2 tablespoons olive oil
1 small onion, thinly sliced
1 pound shrimp, peeled and deveined
1 (15 ounce) can diced tomatoes, juice reserved
1 carrot, shredded
1/2 cup rice
2 tablespoons chopped fresh basil
1 1/2 cup dry white wine
Salt and pepper

In a medium sauce pan, heat the olive oil. Add the onions and sauté for 5 minutes. Add the shrimp and sauté 2 minutes more. Add the tomatoes with the juice, carrot, rice, and the basil. Cook for 5 minutes, then add the wine and simmer for 10 minutes more, or until rice is cooked through. Season to taste with salt and pepper .
