Fast Catfish in Foil
Makes 4 servings
Ingredients
4 catfish fillets (4 ounces each)
2 cups shredded carrots
6 ounces fresh green beans, ends trimmed (about 40 beans)
8 unpeeled baby red potatoes, thinly sliced
Nonstick cooking spray
4 teaspoons lemon juice
2 teaspoons dried parsley
1 teaspoon black pepper
1 teaspoon salt
Preheat toaster oven to 425 degrees F.
Place one fillet on each of 4 (12x12-inch) sheets of foil. Top each fillet with 1⁄2 cup shredded carrots, 10 green beans and 2 sliced potatoes. Spray ingredients on each foil square with cooking spray. Sprinkle each with 1 teaspoon lemon juice, 1⁄2 teaspoon parsley, 1⁄4 teaspoon pepper, and ¼ teaspoon salt.
Fold the foil into packets, sealing securely. Place packets on a baking sheet and bake for 30 minutes. Remove the packets from the oven and let stand 5 minutes. Carefully open packets, allowing steam to escape. Fish should flake when tested with fork. Serve immediately.
