Remoulade Sauce

Makes 1 cup

Ingredients:

1 cup Mayonnaise
3 tablespoons chopped capers
1 tablespoon chopped dill pickle
1/2 teaspoon dried tarragon
1/2 teaspoon chervil
2 teaspoons dijon mustard
Salt and pepper

Place all ingredients in a bowl and stir to combine. Season to taste with salt and pepper. Chill before serving.

Chipotle Sauce for Shrimp or Scallops

1 (8 ounce) can of Chipotle peppers in adobo sauce
2 cups mayonnaise
3 tablespoons prepared yellow mustard
1/4 cup chopped cilantro

In a food processer, chop the chipotles and add the mayonnaise and mustard. Blend until smooth. Add the chopped cilantro leaves and mix well. Let sit 2 hours or overnight before serving.

Lemon Butter Sauce

Makes 1 cup

Ingredients:

1 cup unsalted butter
1 teaspoon chopped garlic
1 tablespoon minced fresh parsley
1/4 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon lemon juice
2 tablespoons white wine

In a medium-sized sauce pan over medium heat, add 1/4 cup of the butter and the remaining ingredients to the pan, sauté for 4-5 minutes. Add the remaining butter and stir until melted. Keep warm until ready to use.
