Salmon and Brie Grilled Cheese

Serves 4

Ingredients:

8 slices rye bread, crust removed
16 thin slices Brie
24 thin slices smoked salmon
2 tablespoons butter
8 eggs
1/4 cup sliced red onion
Parsley, for garnish

Salmon en Croute

Serves 4

Ingredients:

4 (6 ounce) skinless salmon fillets
1/2 cup butter, melted
2 tablespoons chopped fresh dill
Salt and pepper
16 sheets frozen phyllo dough (14x9-inch rectangles), thawed

Preheat oven to 375 degrees F.

Brush each salmon fillet with 1 teaspoon of the melted butter, then sprinkle with the dill, salt and pepper.

Bourbon Glazed Salmon

Serves 4

Ingredients:

3 tablespoons brown sugar
3 tablespoons bourbon
2 tablespoons low-sodium soy sauce
1 tablespoon grated peeled fresh ginger
1 tablespoon fresh lime juice
3 garlic cloves, minced
1/4 teaspoon freshly ground black pepper
4 (6-ounce) skinless salmon fillets
Cooking spray
1/4 cup thinly sliced green onions
1 1/2 tablespoon sesame seeds, toasted

Combine first 7 ingredients in a large zip-top plastic bag. Add fish to bag; seal. Marinate in refrigerator 1 1/2 hours, turning occasionally.

Crunchy Walnut-Crusted Salmon Filets

Serves 4

1 cup chopped walnuts
2 tablespoons dry breadcrumbs
2 tablespoons grated lemon rind
1 tablespoon olive oil
1 tablespoon chopped fresh dill
Salt and pepper
4 salmon fillets, skin-on
2 teaspoon Dijon mustard
Lemon juice

Preheat oven to 350 degrees F.

In food processor, process walnuts, breadcrumbs, lemon rind, oil, dill and salt and pepper to taste, using pulsing action until crumbly, mixture should slightly stick together; set aside.

Salmon Wontons

Makes 25 wontons

6 tablespoons soy sauce
1/4 cup plus 2 teaspoons minced, peeled fresh ginger
1/4 cup rice vinegar
3 tablespoons honey
1/2 pound salmon diced into 1⁄2-inch pieces
3/4 cup finely chopped onion
1/4 cup sliced scallions
1 large egg
1 teaspoon minced garlic
1/4 teaspoon red crushed chilies
1/4 teaspoon salt
1 (12-ounce) package wonton wrappers
Vegetable oil
