Roasted Salmon with Dill Yogurt Sauce

Serves 4

Ingredients:

1/2 cucumber, grated and drained
1/2 cup sour cream
1/2 cup plain unsweetened yogurt
2 teaspoons chopped fresh dill
2 cloves garlic, minced
2 tablespoons lemon juice
Salt and pepper
4 (8 ounce) salmon filets

Preheat oven to 350 degrees F.

In a small bowl, stir together the cucumber, sour cream, yogurt, dill, 1 minced garlic clove, 1 tablespoon lemon juice, and salt and pepper to taste. Set aside.

Salmon with Roasted Cherry Tomatoes

Serves 2

2 cups cherry tomatoes
1 1/2 teaspoons chopped fresh thyme
1 teaspoon olive oil
1/4 cup white wine
1 teaspoon minced garlic
2 (8 ounce) salmon filets
Lemon wedges

Preheat oven to 400°.

Combine first 5 ingredients in a baking dish; toss to coat tomatoes. Bake for 15 minutes. Add fish to pan. Bake an additional 10 minutes or until fish flakes easily when tested with a fork. Serve the tomato mixture over fish. Drizzle with lemon juice.
