Sesame Ginger Roasted Halibut

Serves 4

Ingredients:

1 cup teriyaki sauce
1/2 cup ginger dressing
4 pieces of halibut
1 cup pineapple, thinly sliced
1 green onion, finely diced

Preheat oven to 350 degrees F.

Place fish and diced pineapple on a baking sheet and baste liberally with sauce. Place in oven for 15 minutes or until fish flakes easily. Top each piece of fish with sliced green onions and serve immediately.

Halibut with Salsa Verde

Serves 2

Ingredients:

1 juice of one medium lemon
1/2 teaspoon lemon zest
2 teaspoons drained capers, chopped
1/4 teaspoon minced garlic
Salt and freshly ground black pepper to taste
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 tablespoons chopped fresh cilantro leaves
2 tablespoons chopped flat-leaf parsley leaves
Two (8-ounce 1/2-inch-thick) halibut steaks with skin
Lemon wedges

Beer-Poached Halibut

Makes 4 servings

Ingredients:

1 (12-ounce) bottle pale beer
1 cup fish stock
1/2 cup diced peeled carrot
1/2 cup chopped celery
2 bay leaves
1 teaspoon whole black peppercorns
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 (6-ounce) halibut steaks
1/2 cup minced peeled red onion
6 tablespoons unsalted butter

Spiced Halibut, Pineapple and Pepper Skewers

Makes 2 to 3 servings

1 tablespoon lemon juice or lime juice
1/2 teaspoon minced garlic
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
Pinch of ground cinnamon
Pinch of ground cloves
1/2 pound boneless skinless halibut steak, about 1 inch thick
1/4 small pineapple, peeled, halved lengthwise and cut into 6 pieces
1/2 large green or red bell pepper, cut into 6 pieces
1/4 teaspoon salt
