Crab Salad

Serves 6

Ingredients:

4 cups lettuce leaves
2 cups snow peas
1 1/2 cup red bell pepper, chopped
2 cups cucumber, chopped
8 ounces lump crabmeat
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon sugar
1 teaspoon dill weed
Salt and pepper

In a 2 1/2-quart bowl with a cover, layer lettuce, peas, red pepper, cucumber and crabmeat. Combine mayonnaise, lemon juice, sugar and dill; spread over the crab. Cover and chill several hours or overnight. Season to taste with salt and pepper. Serve chilled.

Crab Quesadillas

Serves 6

Ingredients:
1/4 pound unsalted butter
3 green onions, finely minced
1 teaspoon chives, chopped
1/2 pound lump crabmeat
2 tablespoons sour cream
1 teaspoon chopped dill
Salt
6 Flour Tortillas
1 cup grated pepper jack cheese
1/2 cup finely chopped red bell peppers
Salsa
Guacamole
Sour cream

Preheat oven to 375 degrees F.

Crab Stuffed Snapper

Serves 4

Ingredients:

For the stuffing:
5 slices firm white bread
1/4 cup finely chopped shallots
1/4 cup chopped green onions
1 tablespoon chopped fresh parsley
1 teaspoon salt
1 teaspoon freshly ground pepper
1/2 teaspoon minced garlic
1/4 cup butter , melted
1/4 pound crabmeat, flaked
To finish the dish:
4 whole red snappers, cleaned
1/2 cup fresh lime juice
5 tablespoons butter, softened
3 tablespoons finely chopped onion
1/2 cup water
1/2 cup chopped green onions
2 tablespoons chopped fresh parsley

Seafood Antipasti Platter

Serves 16 to 20

Ingredients:

1 pound squid, cut into rings
1 pound mussels
White wine
16 cooked crab claws
1 pound cooked lobster meat
1 pound medium shrimp, cooked
1/2 pound popcorn shrimp, cooked
16 lemon wedges
3/4 cup olive oil
1/4 cup fresh lemon juice
1 cup mayonnaise
1/3 cup ketchup
Brandy, to taste
Worcestershire sauce, to taste
Salt and pepper

Poach octopus in white wine to cover just until tender (2-3 minutes). Drain. Cool to room temperature.

Hot Crab Dip

Makes 2 cups

Ingredients:

1/3 cup half and half
8 ounces cream cheese, softened
1 cup crab meat, flaked
2 teaspoons lemon juice
1 1/2 teaspoon Worcestershire sauce
Salt

Preheat oven to 350 degrees F.

Mix together all ingredients. Bake in a gratin dish for 20 minutes.

Boiled Shrimp

Makes 2 pounds

Ingredients:

4 bay leaves
20 peppercorns
12 whole cloves
1 teaspoon cayenne pepper
1 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon caraway seed
1 teaspoon mustard seed
1/8 teaspoon cumin seed
1/4 teaspoon fennel seeds
8 cups water
1 large lemon, quartered
1 clove Garlic, minced
2 pounds large shrimp, peeled and deveined

Marinated Shrimp Salad

Serves 6

Ingredients:

3 cups cooked shrimp, peeled, deveined and coarsely chopped
1 small onion, minced
1/2 cup olive or vegetable oil
3 limes, juiced
Salt and pepper
3 cups cooked rice
2 large avocados, peeled, seeded, and diced
1/2 cup chopped pitted green olives
3 tablespoons finely chopped cilantro
3 jalapeno peppers, seeded, deveined, and finely chopped
Whole shrimp to garnish (optional)
Cilantro for garnish (optional)

Shrimp Chowder

Serves 4

Ingredients:

3 medium potatoes, peeled and diced
2 cups frozen sweet corn
1 large onion, chopped
2 cups boiling water
1/4 teaspoon pepper
2 cans evaporated milk
8 ounces shredded cheddar cheese
1 cup whole milk
1/2 pound small shrimp, peeled and deveined
4 tablespoons dry sherry
Salt
Chopped parsley

Put potatoes, corn, onion and boiling water in a crock pot. Cover and cook on high for 3 to 4 hours, or until potatoes are tender.

Cheesy Shrimp Dip

Serves 4

Ingredients:

1 slice bacon
3 medium onions, chopped
1 clove garlic, minced
4 jumbo shrimp, peeled and deveined
1 medium tomato, peeled and chopped
3 cups shredded Monterey jack cheese
4 drops Tabasco sauce
1/8 teaspoon cayenne pepper
1 dash black pepper

Cook bacon until crisp. Drain on paper towel. Sauté onion and garlic in drippings until soft. Drain on paper towel. Coarsely chop the shrimp. Crumble bacon and place in a crockpot along with the other ingredients.

Seafood Paella

Serves 6

Ingredients:

1 tablespoon vegetable oil
8 chicken pieces
1/2 pound turkey Italian sausage, sliced
2 medium onions, chopped
1 red bell pepper , diced
1 green bell pepper, diced
1 1/2 cup yellow rice
3/4 teaspoon oregano
1/2 teaspoon ground turmeric
2 cloves garlic, crushed
3 cups chicken broth
1 (10 ounce) package frozen peas , thawed
1/2 pound medium shrimp, shelled and deveined
1/2 cup canned quartered artichoke hearts, drained
2 tomatoes, cut in wedges
Salt and pepper
